Restaurant Flammen is a Danish, family-owned restaurant chain with 14 restaurants in Denmark

Restaurant Flammen is more than just a restaurant chain. Restaurant Flammen is the realisation of a family’s dream to create a place with hygge for all and with something to suit everyone’s taste in food. A place inspired by its South Jutlandic roots and tradition for providing great tasting meals that are both filling and inexpensive.

From Fole Høkerkro Inn to Flammen

Flammen is owned and run by the Rosenfeldt Sunddal family, to be more precise – mother and father Ketty and Fleming, and their two children, Martin and Kristina. A South Jutlandic family who started with a store in the small town of Fole, located between Haderslev and Ribe. The family have always been hugely interested in food and wine, so they extended the store and held pleasant wine and small plates tasting events in the evenings. Things developed quickly from there and these evenings became very popular. The family therefore decided to take the next step and build their own inn – Fole Høkerkro Inn. This was the beginning of the Flammen fairy tale. The inn still exists in Fole to this day, providing barbecue buffets.

The family loved running the inn and working together. They often discussed the idea of expanding and creating something completely new. The idea of a large barbecue buffet concept, with something to suit everyone’s taste in food, first saw the light of day in 1996 and was developed and tested over a period of years.

One Big Flammen Family

The family spent many years developing the perfect concept, finding the ideal food and creating Flammen, as we know it today. The family decided they would start with a single restaurant in Kolding and asked the bank for a loan. The first bank they asked said no but the second bank they asked believed in their dream and decided to help them. But they still did not have enough money, so the family had to find other ways to make money. Son Martin sold his car, while daughter Kristina sold her horse.

The family were finally able to do what they had dreamed of – they opened their very first Restaurant Flammen in Kolding in 2009. The restaurant is still open today. In fact, Alis, the manager of the restaurant in Kolding has also been part of the family’s adventure from the very beginning. She worked with the family when they ran the Fole Høkerkro Inn, and has been with them ever since.

To begin with, the family received assistance from friends and family, who helped to cut the meat, serve customers and work in the kitchen. Several members of the staff from that period help to run the company today.

Flammen grows

Two years after the restaurant opened in Kolding, the family opened a new restaurant in Odense. The restaurants were hugely popular and therefore, Flammen restaurants spread across Denmark.

Today the chain has 14 restaurants in Denmark and we have just expanded into Germany, where our first international restaurants are located in Hamburg.

Strong values

The Restaurant Flammen values were already in place when Fole Høkerkro Inn was opened – we shall provide a large barbecue buffet made from excellent ingredients, and our vision that every single guest must be satisfied, continues to this day.
